Recipe Thursday: Flank Steak Roll-up

Good morning everyone,

It's recipe Thursday! This week's recipe has a lot of steps; but they are not complicated and trust me the end result is well worth the work! Be sure to check out the kitchen tip for this week as well.

Ingredients:

1 cup Parmesan Cheese
1/2 cup bread crumbs
1 egg lightly beaten
3 cloves garlic minced
2 Tbsp fresh parsley
2 Tbsp Olive Oil
2-2 1/4 lb flank Steak (pounded into rectangle 1/2" thick)
Deli meats and cheeses of choice. (I use Ham, Salami, Turkey, monterey, cheddar etc)
1/4 lb bacon chopped
1 small onion chopped
1 cup white wine
26oz chopped or crushed tomatoes
1tsp crushed red pepper flakes

Directions:

Combine the first 6 (1 clove garlic for this step)
ingredients in a bowl and set aside.
Rub the flank steak with some olive oil and then layer
the meat with the deli meats and cheeses
Spread the bread crumb mixture of the meats and cheeses
Roll up the flank steak and secure with kitchen string
Heat a deep and (if possible) long pot over medium high heat
Book bacon, onion and garlic(the other 2 cloves) 3-5 minutes then remove.
Add the meat and brown on all sides 10-12 minutes.
Add the wine and reduce by half
Stir in the tomatoes, Crushed Red Pepper and the reserved bacon and onion
Lower the heat and simmer for 1 hour.
Adjust seasonings to taste and remove to platter for serving
Cover and let meat rest for at least 10 mins before serving
***Note*** Freeze the leftover sauce and use for spaghetti later.
